They moved to Boise. Now they’ll open 3 chain restaurants with America’s ‘greatest’ sub

A franchise chain that sells “the greatest sandwich in America” will make its Treasure Valley debut soon.

And, like so many restaurants that open in the area, diners can thank Idaho newcomers.

Capriotti’s Sandwich Shop will launch its first location in greater Boise at 200 N. Highbrook Way in Star. The store, which has a target launch date of December, is one of three planned by franchisees Brian and Amanda Robertson. The couple relocated to Idaho from Las Vegas in 2023, according to a press release. Capriotti’s is headquartered in Vegas.

A second Capriotti’s is planned for 2025 in Meridian, a Capriotti’s publicist said in an email. The site of the third location has not been determined, he added.

The Robertsons have been Capriotti’s fans for more than three decades, according to the release, and saw an opportunity in the Treasure Valley.

“Since moving to Boise to be closer to family,” Amanda Robertson explained, “we’ve met plenty of people who have traveled out to Las Vegas purely to get their fix of Capriotti’s.”

Boiseans don’t need to road trip quite that far for a taste. The chain already operates Idaho franchises in Twin Falls, Ammon and Coeur d’Alene.

Founded in 1976, Capriotti’s has more than 175 outlets in the United States. Its signature sub, the turkey-powered Bobbie, is like the fast-casual chain version of a scrumptious refrigerator raid the day after Thanksgiving. The Bobbie was voted “ ‘The Greatest Sandwich in America’ by thousands of readers across the country, as reported by AOL.com,” according to the release.

Capriotti’s “is most famous for its 40-year nightly tradition of slow-roasting whole, all-natural turkeys in-house and hand-shredding them each morning to feature in a variety of subs,” the release says. “This includes The Bobbie, the shop’s acclaimed bestseller, made with homemade turkey, cranberry sauce, stuffing and mayo on a soft roll.”

Capriotti’s menu is filled with an array of cheesesteak subs, turkey subs, classic and vegetarian options — even several American Wagyu beef subs. Soups, salads and sides also are available.

“Our entrance into the Boise market has been a long time coming,” Capriotti’s CEO Ashley Morris said. “The focus for our team is always on partnering with people who bring a passion for the brand, a commitment to community, and a purpose-driven mindset to the franchise. That’s exactly what we’ve found in Brian and Amanda, and what we hope Boise gets to experience as our footprint in the area grows from here.”

Conquering Idaho is just a small step in Capriotti’s future plans. The chain aims to expand to more than 750 locations by 2032, according to the release.
